Grey cattle goulash (for 8 ppl)
Ingredients:
600 g beef shank
50 g lard from Mangalica pig
200 g onion
4 cloves garlic
Sweet paprika
300 g potato
150 g carrot
150 g celery
100 g parsley root
100 g tomato
100 g bell pepper
1 tsp ground caraway
1 tsp salt
In a pot, sauté the diced onion and crushed garlic in the lard until translucent. Then, add the diced bell pepper and tomato, and continue sautéing on medium heat. Remove from the heat, and mix in the paprika and ground caraway. Add the diced beef, cook for about 15 minutes, then add water and salt lightly. Let it cook slowly for an hour. After that, add the diced celery, carrot, and parsley root. After another 15 minutes of cooking, add the diced potatoes.
